Spicy Breakfast Wrap


Um, guys, would you look at me go? I’m on a freak’n breakfast roll! Well, wrap actually, if you wanna get technical about it.  But whatever. CHECK OUT MY BREAKFAST. Yes, it tasted as good as it looks, and I’m about to tell you how you too, can soon be enjoying this tasty breakfast treat. It’s ever so easy.

Breakfast Wrap

I was in the mood for soft boiled eggs today, but you could switch it up with scrambled eggs if you prefer. Only problem with that option is the distinct lack of #yolkporn. And let’s face it, if you can’t hashtag your food, what’s the point of even eating it.

Here’s what you’ll need for your journey to breakfast heaven:

1 or 2 free range eggs (depending on how hungry you are)
1/2 avocado
Handful baby spinach
1 mountain bread wrap (or whichever type of wrap you like)
Sriracha (chilli sauce)
Salt & pepper

Bring a saucepan of water to the boil and cook the eggs for 6-7 minutes.

While the eggs are doing their thing, prepare the rest of your ingredients by slicing up the avocado and arranging it on top of the spinach. Keep everything to one side of the wrap and leave a little space at the bottom so you can fold it up like a burrito. Otherwise you’re going to end up with egg all over your lap.

When the eggs are done, drain off the water and run them under the cold tap briefly. Carefully peel, slice in half and place on top of the avocado and spinach. Hit it with some salt and pepper, and a good squeeze of Sriracha. Lastly, and most importantly, wrap that baby up and get stuck in!
